Hamilton Grant Software has just launched their pH predictor Software as part of their leading Recipe Developer software. The calculation of pH for a product is inherently complex because it is affected by a multitude of ingredient factors. Typically products will be made up of an aqueous phase, addition of weak acids and salts of weak acids, an oil phase, addition of vegetable or meat tissue, and buffering components. Solution of the calculation problem by software opens up a tremendous opportunity for prediction of the profile of products at the development stage. It means that product developers can try out many different variations of recipes in advance before the stage of actual product development and analysis. Much time can be saved, especially by the elimination - at an early stage - of recipe variations that would not have the required properties.
